FOR ORANGE SAUCE

• In a medium pot, add orange juice, sugar, rice vinegar, ginger, garlic, tamari sauce, chili flakes. Heat for 3 minutes.
• In a small bowl, whisk cornstarch with water to form a paste. Add to orange sauce and whisk together.
• Continue to cook 5 minutes or until sauce begins to thicken. Once thickened, remove from heat. Add orange zest.

FOR CHICKEN

• Place flour and cornstarch in a shallow dish and add a pinch of salt. Stir.
• Whisk eggs in a separate dish.
• Dip chicken pieces into egg mixture. Then dip chicken in flour mixture. Place on plate.
• Heat 2-3 inches of oil in a heavy bottomed pan over med-high heat. Bring oil to 350 F.
• Working in batches, cook several pieces at a time. Cook 2-3 minutes, turning often until golden brown.
• Place chicken on paper-towel lined plate to absorb extra oil. Repeat.
• Toss chicken pieces with sauce in a large bowl.
• Serve with garnish of green onions

• Place the chicken slices in a medium bowl. Add the marinade ingredients and mix thoroughly. Let chicken marinate at room temperature for at least 15 minutes.
• Meanwhile, bring a large pot of water to a boil and add the noodles. Cook until al-dente, drain and rinse with cool water. Toss with sesame oil. Set aside.
• Meanwhile, soften Shiitake mushrooms in a bowl of warm water, and prep all your vegetables for the chow mein.
• Heat a large sauté pan(s) or wok over medium-high heat. Add half of the oil. Carefully place chicken pieces in pan, spreading them out in a single layer if possible. Cook without stirring for a minute, to give them a chance to form a "crust", then stir-fry until chicken is done, about an additional 3 minutes. Remove from pan and set aside.
• To the same pan add the remaining oil. Add the ginger and garlic, cooking for a minute or less, just until garlic is golden.
• Add all the vegetables to the wok and stir-fry for a minute or two. Add the cooked reserved chicken, mixing well to combine. Stir-fry for several minutes more, then add the cooked noodles. Add soy sauce to taste and continue to stir-fry until noodles are hot, about an additional 5 minutes.

• Preheat grill to medium-high heat.
• Slice chicken breasts in half horizontally so you have thinner pieces. Season with salt, pepper, and garlic powder. Grill chicken until internal temperature reaches 165 degrees. In the last few minutes of cooking chicken, place a slice of fresh mozzarella on top.
• Lightly brush the inside of the ciabatta rolls with olive oil. Place rolls with oil side down on hot grill and cook just until toasted.
• Meanwhile make the pesto. Wash and dry basil thoroughly. Place basil, pine nuts, chopped garlic, and salt in the work bowl of a food processor. Process quickly to make a coarse paste. With the motor running add the olive oil, and process for another 5 seconds. Place pesto in a bowl and mix in the parmesan cheese.
• Spread a generous amount of pesto on the rolls. Assemble sandwiches by placing chicken breast on bottom bun, then tomato, and lastly arugula.
